• 4 chicken breasts, cut into strips
• 250ml peanuts, finely chopped
• 30ml oil
• 1 onion, chopped
• 1 carrot, grated
• 250g mushrooms, chopped
• 1 red chilli, chopped
• 30ml soy sauce
• fish sauce to taste
• 250ml coconut milk
• noodles to serve
1 Roll the chicken in the chopped peanuts and fry in oil over moderate heat until golden brown. Remove from the pan, then fry the onion, carrots and mushrooms for about 4 minutes until soft and glossy. Stir in the chilli, soy sauce, fish sauce and coconut milk and simmer for about 5 minutes.
2 Dish the chicken back into the sauce, heat through and serve with noodles.
